This new and unique citrus variety continues to spark creativity in the kitchen. The fruit's inedible exterior resembles a pickling cucumber or cocktail avocado in shape and size. Its skin is thin, ranging in color from purplish or greenish-black to light green or rusty red. When sliced in half, the lime juice caviar is revealed. Apply gentle pressure, and the caviar will ooze out of the fruit like a lava flow. Serve over salads, seafood, and any dish that is looking for a fresh pop of citrus with a creative presentation.
Choose slightly firm fruit with no scarring or bruises. Refrigerate for up to one week in a plastic bag.
